카페라떼 (Cafe Latte)
아메리카노 다음으로 인기가 많은 메뉴가 바로 카페라떼인데요, 이탈리아어 Cafe Latte에서 Cafe는 영어의 Coffee, Latte는 Milk를 뜻합니다. 즉 카페라떼도 이름은 그럴듯 하지만 사실은 '커피 우유'일 뿐인거랍니다. 카페라떼는 대개 60ml의 에스프레소에 120~180ml 정도의 우유를 넣어 만듭니다.(프랑스에서는 이 메뉴를 '카페오레(caffe au lait)'라고 부른답니다)
아이스 카페라떼는 에스프레소에 우유와 얼음만 넣지만, 뜨거운 카페라떼는 우유에 스팀을 가하여 데운 후 에스프레소 위에 붓게 되는데, 우유에 스팀을 하는 과정에서 부드러운 우유 거품이 만들어집니다. 물론 바리스타의 실력에 따라 이 거품의 밀도는 달라집니다. 매우 찰지고 부드러운 우유 거품을 에스프레소 위에 붓게 되면, 에스프레소의 크레마 층과 섞이며 하얀 무늬를 만들어 내게 되는데, 훌륭한 바리스타들은 이 우유 거품을 가지고 에스프레소 위에 그림을 그립니다. 이것이 바로 '라떼아트 (Latte Art)' 입니다.
겉보기엔 별거 아닌 것 같지만 대단히 까다로운 작업입니다. 우선 찰진 거품을 만드는 것 자체가 굉장히 어렵고, 그 거품을 부을 때도 굉장히 숙달된 손놀림을 필요로 하기 때문입니다.
