① 아라비카종(Arabica: Arabian Coffee)
에티오피아가 원산지이다. 해발 500~1,000m 정도의 고지대, 기온 15~25°C에서
잘 자라며 병충해에는 약한 반면 미각적으로 대단히 우수하다.
성장속도가 느린 것이 단점이나 향미가 풍부하고 카페인 함유량이 로부스타종보다 적다.
② 로부스타종(Robusta: Wild Congo Coffee)
콩고가 원산지이다. 평지와 해발 600m 사이의 저지대에서 재배되며 병충해에도 강한
특성이 있어 20세기초 적극적으로 재배되기 시작하였다. 성장이 빠른 정글식물로 자극적이고
거친 향을 내지만 경제적인 이점으로 인스턴트 커피에 많이 사용된다.
전세계 산출량의 30%를 점하고 있으며,
생산국은 인도네시아, 우간다,. 앙고라, 콩고, 가나, 필리핀 등이다.
③ 라이베리아종(Liberia: Liberian Coffee)
라이베리아가 원산지이다. 뿌리가 깊어 저온이나 병충해에도 강하고 100~200m의
저지대에서도 환경적응력이 매우 강하다.
그러나 향기와 맛이 좋지 않아 산지에서 약간 소비될 뿐 거의 산출되고 있지 않다.
생산국은 수리남, 라이베리아 등이다.
